  • Spoon the mousse into serving dishes and chill in the refrigerator for at least 2 hours before serving.

2. Lemon Posset

Ingredients:

  • 2 cups heavy cream
  • 3/4 cup sugar
  • Zest and juice of 2 lemons

Recipe:

  • In a saucepan, heat the heavy cream and sugar over medium heat, stirring until the sugar dissolves. Bring to a gentle boil and cook for 3 minutes, stirring constantly.
  • Remove from heat and stir in the lemon zest and juice. Let the mixture cool slightly.
  • Pour the mixture into serving glasses or ramekins and refrigerate for at least 4 hours, or until set.
  • Serve chilled, garnished with a twist of lemon zest or fresh berries.

3. No-Bake Cheesecake

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy cream, whipped
  • Fresh berries or fruit compote for topping

Recipe:

  • In a saucepan, combine the heavy cream, sugar, vanilla bean seeds, and the vanilla bean pod. Heat over medium heat until the mixture is just about to boil, then remove from heat and discard the vanilla bean pod.
  • In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes.
  • Stir the softened gelatin into the warm cream mixture until fully dissolved.
  • Pour the mixture into ramekins or serving glasses. Refrigerate for at least 4 hours, or until set.
  • Serve the panna cotta with fresh fruit or berry sauce on top.

5. Fresh Fruit Tart

Ingredients:

  • 1 pre-made pie crust or tart shell
  • 1 1/2 cups pastry cream (store-bought or homemade)
  • Assorted fresh fruits (strawberries, kiwi, blueberries, etc.)
  • 1/4 cup apricot jam
  • 1 tbsp water

Recipe:

  • Pre-bake the pie crust or tart shell according to the package instructions and let it cool completely.
  • Spread the pastry cream evenly over the cooled tart shell.
